What can be done for Celiacs for Communion?

I am a Celiac, this means I cannot ingest anything made from wheat. At mass this means I cannot receive the body of Christ, only the blood. I have come to terms with this in my own faith experience, but I must ask - if the wafer transfigures into the body, why is the gluten still there? For the benefit and help of the 1 in 100 other Celiac catholics out there, why does the gluten and other parts of the wheat remain? Does the transfiguration add something to the existing matter or change the whole matter? The church has strict rules about the makeup of the wafer, so I cannot bring one in made of rice flour, they stipulate wheat (Canon 925 of the 1983 Code of Canon Law). This leaves Celiacs unable to receive the body. Thanks again for your (name removed by moderator)uts.
