I’d encourage you to speak to your boyfriend’s pastor. You are starting a lot of threads on topics that can easily be answered with a meeting with the priest. I’m sensing a lot of anxiety, and it’s really not necessary.
Weddings can happen on any day of the week. There are specific days the Church doesn’t allow weddings, but they are very few (like the week before Easter, Good Friday, etc).
Weddings can happen any day of the week regardless of whether it involves Catholics, non-Catholics, baptized, unbaptized.
The wedding can be big or small. Weekdays are fine. Weekends are fine. Most people tend to have them on Saturdays, but that’s convenience not because the Church requires it.
The individual parish church may have some limits on when they do wedding for logistical reasons. Nothing in Church law about when weddings can take place apart from those few times I mentioned above when they are not allowed.
