What happens if I miss a day on the 54-day rosary novena? I was about halfway through and I forgot to do it. Can I just pray the one I missed again the next day? Is it possible to do two days in one? I’m concerned that I have to start all over again.

The most important thing you must do is not to treat any novena in a superstitious fashion. The Catechism of the Catholic Church states:
Superstition is the deviation of religious feeling and of the practices this feeling imposes. It can even affect the worship we offer the true God, e.g., when one attributes an importance in some way magical to certain practices otherwise lawful or necessary. To attribute the efficacy of prayers or of sacramental signs to their mere external performance, apart from the interior dispositions that they demand, is to fall into superstition (CCC 2111).
How you make up for missing a day in a novena is up to you. Ordinarily, you can just say the prayers the next day when you remember and extend the end of the novena by one day. However, if you had planned for the novena to end on a certain date in honor of a particular intention, you could also say two sets of the prayers on one day to keep the planned novena on schedule.
