What does a bishop do (for Mass) if he goes on holiday?

Does he have to take over a parish to say mass?

What if he goes to the Vatican, does he co-con-celebrate with the cardinals?

A priest or bishop may celebrate a private mass, every priest I know has a “travel Mass kit” where they can say Mass anywhere.
 
He could also simply sit in the pew like anyone else if he’s on vacation or something. He doesn’t have to preside.

It’s just concelebrate. The con and co mean the same thing.
 
Goes to his monastery if he belongs to a religious order. If it is his turn to celebrate or concelebrate Mass then he does.

He doesn’t have to do anything apart from fulfilling his Sunday obligation by attending Mass like the rest of us.
 
I was at a parish on a vacation not long ago at a daily mass, there could not have been more than a dozen people there. One of the members of the congregation was an Archbishop on vacation from the Bahamas. The only way we knew was because the priest saying mass was a visiting priest at that parish and the Archbishop was a friend of his so he introduced him at the beginning of the homily. He was wearing his pectoral cross, but was not dressed in clerical attire.
