What exactly is the gift of infallibility?

I want to know what the belief of this gift is based on in scripture and what it is exactly.

I was listening to Catholic Answers Live about a year ago and they mentioned that the gift was based on when Christ was talking to Peter, telling him that he is the rock on which Christ will build his fortress that the jaws of death or the gates of hell will not prevail against.
I would just like to know what the apologists here have to say about that and if there is any other references to it in The Bible.
