What to obey out of the Old Testament

So how does the church decide what Old Testament laws to ‘get rid of’ or change, and which to keep?

I hear people saying “Oh, that was true in the Old Testament, but not anymore.” Or “That was for the Old Convenant, but we celebrate the New one.”

If so, why do Catholics follow the Ten Commandments?
 
Matthew 22:37-40:
“Jesus said unto him, Thou shalt love the Lord thy God with all thy heart, and with all thy soul, and with all thy mind. This is the first and great commandment. And the second is like unto it, Thou shalt love thy neighbour as thyself. On these two commandments hang all the law and the prophets.”
How are you going to love God and your neighbour without following Ten Commandments at the same time?
 
So how does the church decide what Old Testament laws to ‘get rid of’ or change, and which to keep?
Most of the laws were never intended for humanity, only the priests of Israel (hence the title “Leviticus”).
If so, why do Catholics follow the Ten Commandments?
The Ten Commandments take a special place in the laws of the Hebrew Bible, as they are general moral sentiments, not simply priestly laws and junctions.

Yes we do follow the Ten Commandments because they were Gods law given to Moses on Mount Sinai. Many of the old testament laws were common sense laws regarding hygiene and a healthy diet.
Jesus told the apostles “Whatever you bind on Earth will be bound in Heaven and whatever you loose on Earth will be loosed in Heaven”. He said it I believe it. End of story.
