To some extent it is true that we can not define God, chiefly because God is infinite, surpassing all human understanding, and we are finite beings. On the other hand the concept of the trinity is so deep and so accepted there is virtually no debate about the fact that God is three in one.
The author seems to want to imagine a controversy about the trinity when there is none. She uses no examples about any debate about the trinity in the past 1600 years all she can offer is a general blanket statement about the “majority of Christians” based on her assumptions and the Christians shes taken the time to know.

The majority of Christians, when asked to explain this fundamental doctrine of their faith, can offer nothing more than “I believe it because I was told to do so.” It is explained away as "mystery
A good analogy is this just because not everyone can explain physics doesn’t mean physics plays a key role in everyone’s life.
Plus if you say the church is prevented from teaching all error by the power of God, and the church has taught that God is triune, what could they say to rebuff you?
