I’m mainly looking for information regarding the structure of the Mass and Office before the revisions of Trent.

While I realise that it’s a huge time span (almost 1500 year), I’m mainly looking for information regarding the version[s?] used from around 1100-1500 in Rome and the Papal Court.

Josef Jungmann’s The Mass of the Roman Rite is definitely a great resource for this.
