When a priest travels, does he mention the name of his own bishop in the Eucharistic prayer (“N. our Pope and N. our Bishop”), or does he insert the name of the bishop of the territory where he currently is?

The priest mentions the Diocesan bishop of the diocese in which he is saying the Mass.

USCCB:
The intercessions of the Eucharistic Prayer include, among other things, the naming of the Supreme Pontiff and the local Ordinary.
