St. Francis de Sales developed a form a sign language in order to spread the gospel to the deaf.
Saints Cyril and Methodius developed the Glagolitic alphabet which formed the basis for the Cyrillic languages which many Eastern European languages are based on.
Those should give you a good start.

St. John Paul II could speak 11 languages fluently. He seems like a good one.
