That’s actually a good point - I had dismissed this as an obvious joke and assumed it would be completely invalid, but I think you are correct that the salt, butter, leavening, etc would probably just make it illicit, not invalid. And there is certainly no obstacle to having the host in a different shape.
The only problem I have about the secular shape of the pretzel, is that its hardly a dignified shape to represent the usual common round wafer shape of a host.

Imagine the shock and disgrace of seeing a pretzel shape so called host in a Monstrance?

No I certainly can NOT!

While I don’t advocate pretzel-shaped hosts, it is noteworthy that the shape itself is a fom of prayer. The simple pretzel knot was “invented” by a monk in the middle ages who used leftover bread dough to teach children how to pray, and as a reward for their lessons. Just a bit of trivia. tomsturgispretzels.com/pretzel_history.asp

A pretzel isn’t much different than brioche. It’s neither made as, nor eaten in lieu of, bread. If one wants to take the argument to the extreme, we can look at WheatThins as an example. Ultimately they are crackers made from wheat, salt, leavening (plus who-without-a-degree-in-in-chemistry knows-what else), but would anyone consider same to be “bread” (i.e. “valid matter” for the Eucharist)?
Wheat thins, no. Triscuits, maybe. I think they may have oil in them. Triscuits were first made by the Shredded Wheat company, and are essentially shredded wheat with salt (and,as I said, maybe a little oil). Shredded wheat itself is just that, shredded wheat. Plain versions contain no other ingredients. Which means it might just be valid. Though I’d hate to see someone try the fraction with a large shredded wheat biscuit. Bits flying everywhere.
