Why Apostasy?

I have to admit that when I was a Mormon I rarely thought of the Great Apostasy either which way. It just wasn’t a topic that interested me. I’ve been thinking about it lately though and now it doesn’t make sense. Here are my questions: why would there be a Great Apostasy?

Yes, there are mentions of a ‘falling away’ before the end, but if read in context Paul was already witnessing that very falling away anyway. Many had succumbed to heresies even in his lifetime. How can we assume that means a Great Apostasy?

And here is the greater issue for me at this point: if the church that Christ Himself, God, established could fall away why would we assume that the church established by/through Joseph Smith would not fall away? There is no assurance if God Himself cannot hold a church together. I suppose that is to say, it makes no sense that after Christ’s atonement- The Event- there would be two millenia of darkness and a great re-awakening. That would just be a distraction to The EVent. That’s also why the New Testament ought to close the canon.
