Why are both bread and wine consecrated?

Given that Jesus is truly present, body, blood, soul and divinity, under both species, why must we consecrate both bread and wine at Mass? Of course, Christ did so at the Last Supper and the Mass is the Last Supper, but there a theological explanation for why Christ did both?
A Jewish friend asked recently suggesting that the Lord doesn’t do thing in excess.

Our Lord could have just used bread. But to see a body separate from its blood signifies that the body died. The Eucharist therefore is a living sign of his death. His death is the very core of the Christian faith. It took place in time, but transcends time; bringing Good Friday into our life situations two thousand years later. The Eucharist remains, therefore, a living memorial of his great act of divine love for us.
