Why are there paintings of God the Father and Holy Spirit but I never saw a statue of Them?

The same way you depict it in a painting.

Yes- this is what I was thinking either both or none.

So my question will be rephrased-why are these statues so rare?

I’ve seen a dove depicted in stained glass windows and figure of a dove hanging over altars in Catholic Churches.

Remember: Pins, pictures, and windows are different than statues.

The Church has refrained from mass-producing statues of the Father and of the Holy Spirit. There has to be a reason for this.
