Why can't a Catholic receive "open communion"?

As I cited above, the exact rules are actually NOT in the Catechism per se, but they ARE part of Canon Law.
I"m assuming a layperson can buy a copy of Canon Law? It seems to have some pretty neat things to know in it.

Yes, that passage makes it clear that my circumstance would definitely be a NO to communion in other faiths.

And once again there are many protestant churches that believe in a real presence. They may define a bit differently than Catholics do, but they do believe in a real presence.
They may believe in the true presence but they are not valid priests descended from the apostles and have not received the Sacrament of Holy Orders so they cannot consecrate the bread and wine. Regardless of what the protestant minister believes, it is not the body and blood of Christ.

Rolltide gave you the link directly on the Vatican’s website which has the Code of Canon Law. Also you can buy books which includes commentaries which would help understand each Canon better and what is the intention of each Canon. You can go to amazon.com and search “canon law”.

Thank you all for the info, especially the links about Canon Law and tips to understanding.👍

As a former baptist and studying Catholic the more I learn the more I realize -
communion between the two is NOT the same thing.

Nope, it really isn’t at all… I’m glad this thread has helped you out.
