Why do Catholics kiss episcopal rings?

I do not understand the practice of kissing a bishop’s ring. Why exactly is it done?
 
The ring is a symbol of the bishop’s authority. Kissing the ring of a bishop is done as a sign of respect for the authority of the bishop. In more chivalrous times, men would kiss the hand of a woman as a gesture of respect for her. Just as there was nothing wrong with kissing a woman’s hand, so there is nothing wrong with kissing a bishop’s ring.
