Why does the Church offer a gluten free host for Celiacs?

If we believe the Eucharist is the true body, blood, soul, and divinity of Christ, and heals us body, mind, and soul, why are wheat free hosts offered at Mass? I am aware some people have allergies or sensitivities to wheat, I am such a person. But, faith tells us the Eucharist will not make me sick. I am confused as to why the Church offers an alternative host.
