Why is it believed that a soul, not destined even for purgatory, at the moment of death, is destined forever to hell? Why is physical death of the body key?

I think you are wrong and Catholic teaching is precisely that you go to hell if with mortal sin at death.It is not that somebody goes to hell just because at the point of death he unfortunately happened to be with a grave sin
I think you are missing the point of joseie’s post which was to point out that "those who go to hell will be such people have purposely rejected God, refused to go by his way and shut themselves out from the mercy and grace of God and most importantly refused to repent for their sins. It is not that they are punished permanently for missing just one chance. People send themselves to Hell, basically. If you have a grave sin on your soul at death but you express repentance to God, then God may well be merciful to you.
The story of the priest and the prostitute, as told by a Catholic Answers apologist, is a helpful example in this regard.
