Why Receive Communion Two Ways

In the US, there has been a wide permission given, subject to the bishop, to offer communion under both kinds at many or all masses. Most churches today offer this at least at the Sunday Mass. There is no need to receive both, but some prefer to because it is the complete symbol of eating and drinking, and they or their families may be used to this. The celebrating priest of a mass needs to consecrate and consume both, because the mass is the continuation of the death of Christ, where his body was separated from his blood.
