If it were me I would go ahead and **talk with the parents and see what they actually think **of the project. Explain that you are concerned with what they think, but that you would like to continue with the project if they have no objections.

Eastern Christian Publications has a variety of Coloring Books of Sacred Icons, none of which have I seen.
While they are assembling the Icons, I explain some of the symbolism of the colors, posture, and objects…
I own and love and use often their
The Twelve Great Feasts: Part 1 The Handbook. It breaks down each Icon into the main components and describes those, as well several pages about the Feast itself and a section at the end of “Activities” some of which connect with the companion book The Twelve Great Feasts: Part 2 The Toolkit. *
The coloring books may do this as well, I wish I’d seen them and could tell you. Neither their site nor St. Joseph School for Boys gives a description. Maybe
EC Pub could fax or scan/pdf you a page to see what they look like.
I notice that Ronda Doucette who runs the Orthodox St. Joseph School for Boys Bookstore website has
these same coloring books and Handbooks for sale on their site. She’s an Orthodox homeschooler I believe. I’ve purchased a number of things from her in the past. One that I also love for it’s portability re Feasts and Icons is their
Orthodox Children’s Icon Flashcards. The Flashcards are large, on good heavy paper and have an extensive description on the back.
(I don’t work with children, I’m a catechist with adults and the two resource I mention I use with adults, although they are marketed for children. I like to make use of Holy Icons for emphasizing Feast Days for our Latin catechumen.)
Off topic, but with the Greek Orthodox family in your co-op it might also be an opportunity to talk about fasting traditions.
