If all scripture is inspired by God please tell my the Gospels of Peter and Thomas are not in your Bibles

Neither is scripture.

Neither was written by the apostle ascribed to it.
 
They were simply not accepted by the Church as suitable to be read at worship.

Nevertheless, in an age where books had to be copied by hand, they and other early Christian writings were preserved and transmitted because it was felt they had something of value.

OTOH, one of St. Paul’s letters, that to the Laodiceans, was NOT preserved, though it’s referred to in one of his canonical letters. Obvoiusly, there wasn’t anything in there worthwhile.
