Can someone explain why in traditonal catholicsim, only boys can be altar servers?

For a long time altar servers were originally part of the clergy - ordained in minor orders. Their role was as an apprenticeship to the priest. Altar serving was a path to ordination - the first step (pun intended) on the climb to the altar. In the traditional Mass, the reason remains the same.

when i was a young girl, i sooooooo wanted to be a an alter girl. a nun took me aside and explained to me that becoming an alter boy is a first step to the priesthood. if girls were to be aloud to serve mass it would take away graces needed for our future priests.

That was a holy and wise thing for her to say.

For the same reasons that were held before Vatican 2. To discern a vocation to the priesthood. As a former altar boy It is very sad to see what has happened. I remember, lighting tall candles, setting up the altar, holding the patten and waving the incense. All lost now in the modern NO Mass!.
