The man, standing over behind the model of the Temple, has spent more than 30 years building an enormous scale model of the Biblical temple. Historical experts believe the model is the best representation in the world
of what the Jewish temple actually looked like. (These comments are quoted from an article in a Biblical archaeology periodical, at http://theworldofbiblicalarchaeology.blogspot.com/2011/06/1100-scale-model-of-solomons-temple.html )

so would the marketplace (for sacrifices) be in the center square within the walls?

No. That center square is the Court of the Israelites - the furthermost point in the Temple in which lay Jewish males could enter. That area outside inside the low wall is the Court of the Women, which is as far as Jewish women could go. Beyond that is the Court of the Gentiles, which is as far as all non-Jews visiting the Temple could go.

The vendors would have been in the Court of the Gentiles and the surrounding porches as well as outside.

Basically yes.

The main market was usually thought to have been in what’s called the Royal Portico (also Royal Porch or Royal Stoa), which was basically a basilica-like structure on the south side of the Temple Mount.
