At confession today we had another priest filling in for our regular one. He said “May the Lord Jesus Christ absolve you of your sins in the name of The Father and The Son and The Holy Spirit”. Is this valid?

If I had to guess, I’d say no, because the official words are “I absolve you of your sins”. I may be wrong, but either way, this priest needs to say the black and do the red. There is no reason for this sort of thing to happen.
