With regards to some being fishermen, they didn’t just sit on a dock. They owned boats, had to buy, sell, and repair equipment. It was a bit of a business endeavor. I’m not saying they were highly schooled, and they weren’t rich, but they weren’t poverty level, either. Being from Galilee they likely spoke both Aramaic and even some koine (common) greek, as they’d have had dealings with gentiles.

From what I have learned in studies, approximately 90% of the population were estimated to be illiterate. I know recently some info has come out that may lower the number, but I don’t think by very much.

Paul was taught by Gamaliel (a famous Rabbi to Jews even to this day), as well as educated enough to know Greco-Roman argument styles. Matthew definitely wouldn’t be stupid either.

Secondly, Galilee was by Caesarea Maritima… the most Gentile and Cosmopolitan city in Judea at that time. It’s likely that they brushed shoulders. And definitely did later, as seen in Acts, when Phillip preached there.

Besides, it’s not even that long ago. It’s not the Stone Age. We’re closer to Jesus’ time than he was to that.
