I was assuming you had read the thread, or at least the comment thread you were posting on. My bad. Anyway no problem:
When people are starving they often will do anything to keep themselves alive even if that means stealing or fighting for food or eating anything, even a dead animal. I doubt they would be committing any sin in that case.
Which was in reply to:
I would think the Catholic Church would say it’s against the dignity of humans to eat human flesh under any circumstances.
Seems clear to me what was meant.

I’ve read the thread.

You’ve said “I would suspect” and “I would think” the Church teaches something. Are you going to post an actual source that backs up your suspicions and thoughts?

Leaf-eating hopping insects like locusts are kosher. Didn’t St. John the Baptist eat locusts & wild honey?

Generally, those locust species are deemed kosher that were considered so by ancient tradition. However, this is a controversial issue with respect to Jewish law as well as variations according to diverse Jewish cultures.

I know and am persuaded in the Lord Jesus that nothing is unclean in itself; but it is unclean for anyone who thinks it unclean. If your brother or sister is being injured by what you eat, you are no longer walking in love. Do not let what you eat cause the ruin of one for whom Christ died.
Romans 14:14‭-‬15 NRSV-CI

We shouldn’t poke fun at vegans or vegetarians.

No, Revelation 2:20 still speaks against it. What Paul said is to have a “don’t ask, don’t tell” policy with regard to meat. Abstain if someone volunteers that the meat was sacrificed to an idol, but you have no obligation to inquire as to this fact.
