Do the Armenians keep the Jonah Fast? Do all members of the Oriental Orthodox Communion?

Yes I believe all Oriental Orthodox do have the fasting of the Ninevites, including Armenians and Copts. The Church of The East is the originator of this tradition however, spreading through Syriac Christianity. Although I doubt each church has the same prayers and narratives.

So would it be correct to say all non-Byzantine Eastern Christians have the Jonah Fast as part of their tradition?

Yes, it seems that the Armenians do continue to observe it, albeit under the name Fast of the Catechumens.

As a secondary point, the Syriac Churches (Eastern & Western) normally refer to this as the Rogation of the Ninevites or the Fast of Nineweh.

And as a tertiary point, I will sadly note that, while it was indeed traditional, the Maronite Church abandoned the practice in 1599 as part of a series of then-contemporary latinizations. 😦
