Let’s say I have committed a sin that defames and mocks the Eucharist, do I have to reveal exactly what I did? Can I just say that I have mocked and defamed the holy Eucharist? Will I be forgiven if I said that?

And I’m sorry, it is not a laughing matter. Just to lighten this for you.
I would include it as confessional sin - to mock the Eucharist is to mock God; you know what that means. While not knowing exactly what you do or in your heart, could it be a situation of lacking in faith, and you did some foolish thing?
You can confess it as it is; do not go into detail, unless the priest ask you. That is the thing about Confession, it is unnecessary to go into detail, just the number and kind. I guess it makes thing lot easier for the penitent and perhaps saves on the time for the person next on the line.
And as advised, you can talk this kind of thing with a pastor, in order to receive in depth counselling.
The last question is the question all of us often ask. We feel the gravity of our sins, realizing how we have offended God by them. If taken that way it is a good thing - to show how much we regret it, as if it is so great that God may not forgive us.
The good news is, God forgive all sins; and we really, really have to believe this. The Bible says God forgive all sins except for the sin against the Holy Spirit. Someone said it is a sin when we do not, would not, and cannot, believe that God forgives our sin, then God cannot forgive that. That was the reason Jesus died, so that our sins are forgiven when we come to him in repentance.
