Aside from Tolkien’s works, my favorite Catholic book is Father Elijah: An Apocalypse, by Michael O’Brien. Really interesting novel with politics, spirituality, angels, the AntiChrist, suspense and adventure.

The Song of Bernadette, by Franz Werfel
Werfel’s novel about the Armenian genocide The Forty Days of Musa Dagh is also an excellent literary read, though a bit heavy going in places. Though not strictly Catholic fiction, I would say it has Christian themes.
