My grandparents had a dairy farm. Young bulls were used for meat. Cows were kept for milk production. By the time they reached the end of their useful life they were far too tough to eat. I think they were ground up for dog food.I think the cattle that is processed into meat must have a few “boy cows” I guess about 50%.So I wouldn’t think meat from a bull would be tough and stringy.
