Say I went to a lunch counter, and bought, say, a sandwich and a cup of coffee. Later, the proprietor uses the money I gave him for that meal to, commit a mortal sin. Have I in this hypothetical case committed a sin?

I agree, no. Well, possibly unless he told you that is what he was going to do before you gave him the money. That might make you an facilitator of his sin? Not sure about that. OTOH, when was the last time anyone said, “Hey, come buy a sandwich; I need the money to watch me some porn.”

NO! Only if you knew they were doing something bad with it.

That would be like saying:
You’re forced to pay tax. The goverment uses the tax to pay for abortion funding (This is evil). You have commited sin.
