I feel called to veil at Mass, but I serve as a Eucharistic Minister and Lector and I don’t know if there are any rules on veiling while serving in those roles. Please let me know.

As far as I am aware, there are no prohibitions regarding veils and serving as a Lector or Extraordinary Minister of the Eucharist.
The only problem might be if the local pastor thinks it might be “too distracting” to other people, but I don’t think that would really be an issue.
General Instruction of the Roman Missal:
In the dioceses of the United States of America, acolytes, altar servers, lectors, and other lay ministers may wear the alb or other suitable vesture or other appropriate and dignified clothing.
