Can meetings be scheduled during Sunday Mass?

My parish has a very active Hispanic ministry and celebrates Spanish Mass every Sunday. There is, however, no Hispanic youth ministry, in addition to LifeTeen and Edge. While LifeTeen and Edge meetings start 30 minutes after the Spanish Mass is scheduled to end, the “core team” meets during the same time Mass is being celebrated. That precludes parishioners attending the Spanish Mass from participating as youth ministers. My question is this: Is there a rule or policy that limits or prevents such meetings from taking place during a Sunday Mass?
 
No, so far as I know, there is nothing that prevents a meeting from being held on another part of the parish grounds at the same time Mass is being offered. What I’m wondering though is why there are so many parish meetings being scheduled for Sunday, which is the Lord’s Day and a weekly holy day for Catholics. Surely it would be better for this kind of parish business to be conducted either on Saturday (if it needs to be on the weekend) or on a weeknight. Scheduling these kind of meetings for a day other than Sunday would emphasize to the parish community that we should not be “Sunday-only Catholics.”
