I am not Catholic but have been praying to St. Dymphna and Mother Mary. Strange as it may sound, I have found a peace I have never had before; not a sense of God in my life, just a renewed strength to go on and not sleep away my life. Is it okay for non-Catholics to pray to the saints?

Sure. The saints are available to anyone who calls upon them in love and trust. And, it should be noted, many non-Catholic Eastern Christians pray for the intercession of the saints as part of their shared faith with Catholics in the communion of saints.
