Can saints read your thoughts?

I’m asking this question because I heard on a program on Catholic Radio that only God can hear your thoughts. I’m interpreting this no one else can read our mind, not Satan or anyone else, including Saints and Angels.

My bigger question is when saying the rosary or saying an intercessory prayer to the saints, do we have to say those prayers out loud to be heard and can we just pray them in our head?
