Can we call the Trinity "People"?

No: A couple of reasons: 1) in this type of context, I think the definition of the word people would certainly include human beings. 2) why would you want to? The Church has spent lots of time trying to be very precise on words used when describing theological ideas. Use the words selected by the Church, they are proper and carefully selected by the magisterium. It would only be pride that would tell you another word is better.
 
In a more techical sense, the translation of “hupostasis” into English is “person”, but not in the sense that we speak of human beings,but rather in the sense that there is distinctness in the trinity between Father, Son and Holy Spirit. “People” in English does not suggest distinctness in the way that “persons” does, and thus, when referred to in the plural, they are the “persons”, not “people.”
 
Have you ever noticed that the Sign of the Cross is
“In the name of the Father, and of the Son and of the Holy Spirit” and NOT
“In the names of the Father, and of the Son and of the Holy Spirit”

The Father, the Son, and the Holy Spirit is the name of the Blessed Trinity, not the names of the Blessed Trinity.
