I know we have one guardian angel. But is it possible that we can have 2 guardian angels? Were there persons or saints in history who had 2 or more guardian angels?

I believe not. We have one guardian angel selected from the Choir of Angels and Archangels depending on your life’s journey. The Pope may have two: his guardian angel as well as Saint Michael the Archangel who protects the Church and Vatican.

Why?
Angels are specifically and individually created by God to perform a certain function. They are not like humans in the sense that John and Mary are individuals, but they are still both humans. Each angel is completely different from the next. So, as they are created individually for a specific function, there cannot be two angels that are created specifically for the same function, as God would just be recreating the same angel.
More abstract answer: Yes
Why?
While there may just be one angel that is specifically created for watching over an individual, that doesn’t mean that you also fall under the protection of other angels. There may be an angel who was created whose function is to protect all men or women. There may be an angel who was created whose function is to protect all members of a certain profession. We know from the scriptures that there are at least four angels guarding us against everything from demonic influence to doubt to sickness (be it physical or spiritual). In addition to our Guardian Angel, these three other guardians are Michael, Gabriel, and Raphael. They may not be our Guardian, but they are still our guardians
