Does the Bible tell if the Israelites completely destroyed all of what the Canaanites built (cities, etc.) or does it say if the Israelites settled the Canaanite cities after destroying their population?

Did Israel kill all the Canaanites or did some survive?

Some survived. Remember that Israel was negatively criticized for not exterminating them altogether, and that the Gibeonites even entered an alliance with the Israelites, and that Jebusites survived (cf. Araunah the Jebusite from whom David bought the threshing-floor). As for the infrastructure they left behind, I’m not sure.
