Casserole Queen's and King's -- help me out here!

I am not usually a casserole maker, per se’, but I am kinda craving one. I want a version of say Hamburger Helper’s Cheeseburger Macaroni, but all the recipes I find suggests adding a box of macaroni and cheese with the powder mix. Which I dont have as I prefer my mac and cheese homemade and baked.

I also found an envelope of taco mix (Guy, don’t even start, I don’t have the shells, or yes it would be taco night, and no, going to the store is not an option at this point.) so I thought maybe a spicy-cheesy-beefy noodle casserole?

So what should I add to make more moisture in the casserole that the noodles are going to soak up in the oven? Some more water? A can of tomato sauce? No, maybe a can or just half a can of tomato soup so it’s not too tomato-ey? Just slightly?

Then top with cheese and bake?

What say you those of more expanded casserole knowledge?

I used to have a slow cooker recipe for chili macaroni. It had macaroni, taco seasoning, tomatoes, hamburger, cheese and maybe a few other things. Search on chili macaroni and see what you find.

Thanks, I think I got it. In fact I just noticed that there is tomato juice in my pantry so I’ll add some of that!

Oh man. It’s only 9.30 in the morning and now I’m totally jonesin’ for some spicy-cheesy-beefy noodle casserole. I have to avoid these kinds of threads …
 
Why don’t you make your homemade Macaroni & cheese & add cooked ground beef to it?😉
 
OK So here it goes! (It’s all gone too, the kids and DH ate it all up!)

Make about 8oz of macaroni by following package directions.

Meanwhile brown a pound of ground beef, drain and make exactly to Lawry’s taco seasoning directions.

Add 2 cups tomato juice and boil for a bit, like 3 or 4 minutes. If it is too watery add a little bit of flour on the top and stir well. You do want a lot of juice though as the noodles do suck up a lot of moisture.

In a casserole dish mix the noodles and the beef mixture. Top with 2 cups shredded cheddar cheese. Bake at 350F for 30 minutes.

YUM!

LOL well if I had leftovers you’d be welcome. I never saw a casserole disappear so fast!

I thought of another one today:

Some of the pre-cooked grilled chicken breast strips. Spinach. Peas. Bowtie pasta. Milk. Packet of Ranch Dressing Powder. Parmesean Cheese.

YUM. Tonight I think! LOL

Hey, if you really want to become a creative cook, there was a book that helped me a lot when I first got out of college: Cooking Without Recipes, by Helen Worth. It only seems to be available used now, but there do seem to be used copies out there.

It was a huge help. I grew up surrounded by good cooks and didn’t get a chance to learn till I had a kitchen to myself. (Had great skills at cheese-grating, though! pre-food-processor era)

This book takes you from “how to boil water” to “how to do the basic cooking methods” to “how to duplicate something wonderful that you’ve just been served.” No kidding! It gave me so much confidence, now the biggest problem is that when I tweak a recipe with some extra seasonings or just throw something together because it smells good, I can’t always remember how I did it.

Awwww -now I need to go talk my mom into making some of her famous tomato casserole. Very similar, except she used to add a can of beans as well.👍
