Cauliflower rice

During my most recent trip to Trader Joe’s, I grabbed for my favorite bag of microwavable cauliflower florets, and mistakenly picked up a bag of cauliflower “rice”. :confused:

I love cauliflower, but this stuff is weird. It’s basically raw cauliflower that’s been food-prosessed into dust. Any advice?
 
cook it to a golden brown with some olive oil and garlic and use as you might use rice…really good under grilled shish-ka-bobs in the summer.

I started making in when wife was diagnosed with type II diabetes and wasn’t supposed to have the carbs in rice.
 
After much consideration, I think I’m going to use it to make stuffed peppers. Unless it turns out miraculously good, I don’t think I’m going to buy it again. Every recipe I found for riced cauliflower was using it as some sort of bizarre attempt at substituting for a grain. Cauliflower is meant to be delicious in it’s own right, not made into nasty, bread-ish stuff. I don’t want to disrespect cauliflower that way, as it’s one of my favorite veggies! Next time, I’m going to have to watch what I’m doing and make sure to get my florets!
