When a patronal feast day falls on a Sunday during Ordinary Time, it can be celebrated as a Solemnity. In that case, must the readings from that Sunday be used? How about the opening collect, preface, and post-communion prayer? Is substitution permissible, e.g. from the Commons?

Substitution appropriate for the feast/solemnity is permitted.

You can’t pick any readings/prayers willy-nilly; go with those for the patron saint’s feast.

But the lectionary readings are not saints-specific, unlike in the Tridentine calendar.

Some saints feasts do have specific readings - eg the feast of the Apostle Thomas would have his particular Gospel story included. In such a case substitution for.the Sunday reading would be permitted in places where it is a patronal feast.

Not sure about St John Eudes - your priest would know.

The Missal specifies the following:

Second Reading: Ephesians 3:14-19 [Lectionary # 476 short form]
Psalm: 131 (select verses) [486]
Gospel Acclamation: [480]
Gospel: Matthew 11:25-30 [170]

There is a proper Collect; otherwise, use the Common of Pastors for One Pastor or the Common of Holy Men and Women Religious

The First Reading would be selected from the options in the Commons that most aligns with the others (especially the Gospel) above.
