“I need you like you would not believe”
is colloquial and probably rather sloppy use of language.
It’s meant to be chatty, I think. It’s not intended to offend or to be taken literally.
You might hear someone say, I need a drink like you wouldn’t believe. It’s a clumsy way of **emphasizing **the need.
