Christmas side dishes

We’re having ham, turkey, squash, stuffing and potatoes of some sort.

What simple side dishes do you like? Looking for something new…
 
Corn casserole! Very simple. A box of corn muffin mix, a can of corn (not drained), a can of creamed corn, 2 eggs, 1 stick of butter – melted, and 8 oz of sour cream. Mix well, pour into 13x9 pan, and bake at 350 for 45 minutes or until knife inserted in center comes out clean.
 
Peas, green, with butter

Broccoli, steamed (no cheese sauce)

Potatoes, mashed or au gratin

Tossed salad

Sorry, nothing on my list is new, I’m boring…

I second brussel sprouts. Cut them in half - roast at 425 degrees for 25 minutes or so. They need to be tender but not overdone. They will, however, have charred edges. This is desirable! Top with butter and salt and pepper or get more fancy with whatever you like.
 
Christmas jello! 3 layers
1st layer green jello with pineapple in it
2nd layer cream cheese and lemon jello
3rd layer red jello with pinapple
Instead of water to make the jello use the juice of the crushed pineapple
Let it set between layers, then add the next layer
Use a clear bowl looks pretty and festive but so easy
 
I made succotash for our Third-Sunday-of-Advent-Party and now both my mom and my stepmom want me to bring it for Christmas dinner!
 
Green Bean Casserole

Green Beans with Philly. (Just cook the beans, drain, and stir in half a block of Philly)

Brocolli Rice Casserole.

A waldorf salad or version of. Get your fruits in there and a simple veggie
 
Glazed carrots–cut carrots in half then cut each half into four (or more if the carrots are thick) sticks. Saute in butter over medium heat. Season with salt and pepper to taste and then add brown sugar–as much or as little as you like–a spoonful at a time until carrots are crisp tender and coated with a sweet glaze.
 
I love fresh cranberry sauce! What you do is purchase a package of whole cranberries (do not try and taste one right out of the bag, they are super tart!), put them in a pot over medium-high heat with about a cup of water and a cup of sugar and wait until they pop! It’s very similar to popcorn, so when all the berries have popped, you take it off the stove, and let it sit. I like to leave the berries in the sauce to give it some texture, but you can definitely strain the mixture and just let the liquid sit in the refrigerator. It is always a hit, especially on biscuits; you can always save the leftovers and use it like jelly. Perfect by itself or on bread, muffins, pancakes, etc. 🙂

Wow!!! Thank you so much for this recipe!!! My mom used to make this every Christmas when I was young. I loved it so much!

If it’s not too much of a downer, and thread derail :o), please pray for my parents. Right now, my mom is in a temporary care home expecting (before) to go back home to live with my dad who had a stroke (among numerous other medical problems all at once). However, he is lucky to be alive and my husband and I are making everything as nice for Christmas as possible for them.

Anyway, thank you for reminding me of a happy side dish!!! Maybe I can make it and bring some to each of my parents! Merry Christmas!
 
I’ll be in charge of the stuffed mushrooms and asparagus. The mushroom recipe isn’t difficult, but it *is *time-consuming. The asparagus though, is easy:

Boil them until they are only slightly tender, then lay them out in an even layer on a baking pan (with edges).
  • coat them lightly with olive oil and melted butter
  • Salt/pepper
  • add a bit of lemon juice (optional)
  • sprinkle them with Paremsan cheese
Bake in a 350 oven for about 25 minutes

Sprinkle a bit more Parmesan when they come out of the oven. 🙂

EDIT: Just said a prayer for your family, Grasscutter. :gopray2:

I like adding dried cranberries to my waldorf salad at Christmas. Also, I like to serve a simple green vegetables, such as green beans almondine. Together, they add a nice touch of red and green to the plate.
