There are many good resources. How Christ Said the First Mass (Tan) Also don’t neglect the Early Fathers, Didache and St. Justin.

“The Shape of the Liturgy” by Dom Gregory Dix is exhaustive and authoritative. It is widely available. Please note that he was an Anglican priest and academic, a potential turn-off to some Roman Catholics. On the other hand, he wrote clearly, and in English.
