would it not be better to call the church the co-redemptrix better then the symbol of the church (Mary)?

Maybe on some allegorical level, but otherwise no.

The term co-Redemptrix is reserved to Mary, who participated in our redemption. She brought the redeemer into the world and shared in His life, passion and death, and has been glorified in His conquering of death by His Resurrection.

The Church does not participate in the redemption of humankind, because that has been done already. The duty of the Church is to perpetuate the message of that redemption and lead her followers to its benefits.
