I am scrupulous and constantly in fear of being in a state of mortal sin. Sometimes I do things over and over again for the sole purpose of trying to determine whether or not they are sinful. For example, I go over the same thoughts in my head over and over and over again or I talk about them with people. If these things are indeed sins, would the conditions of full knowledge and deliberate consent be fulfilled? Sometimes I am not sure if I am actually doubting the sinfulness of actions or if I am trying to pretend that I doubt it. And also I’m not sure if it counts as me consenting if I only commit certain sins to see if they are sinful.

You should speak to your priest and maybe a counselor about your scrupulous thoughts and fixations. Asking questions online will not help you. It will only feed the compulsions and lead you into further reassurance seeking.

You are in my prayers.

Nothing to add, just really want to reiterate what -Fr ACEGC said in his post. Don’t ask here, talk to your priest.

Hello friend,
Please read this entire article taken from Fr. Alfred Wilson’s 1946 book Pardon and Peace: Are you scrupulous?… Some helpful tips for confession. | Littlest Souls.
And while you are there, check out the other posts on that blog as well. I too suffered from scruples for about a year and a half. I know how painful, how excruciating it can be, but you have to use your reason. You know when something is wrong and when it’s not. Don’t let yourself think that you can’t figure it out. And don’t let the Devil make you think you can’t figure it out. I was virtually cured from my scruples by begging Our Lady to help free me from scruples during a weekend retreat. I encourage you to also beg her for freedom. I also recommending praying the Divine Mercy Chaplet every day. I’ll be praying for you too.
