The rite calls for an anointing with the laying on of hands. Doesn’t the bishop put his hand on the head of the person being confirmed?
The rite calls for the bishop to extend his hands over the candidates and say the prayer. This is done en masse, not individually.
 
The other one is not a nun, but a hooded priest hearing a confession. Not sure why he’s hooded, one interpretation I’ve read is it symbolized a judge–not sure if it was artistic license or whether priests actually did that.
Looks more like a prayer shawl than a hood (fringe on the edges). Artist’s version of the stole?
 
Just to add, in the East they use a little “anointing brush” and have for centuries.
I can’t speak for other jurisdictions, but for any anointing, including Chrysmation, my priest draws a cross with the brush.

you wouldn’t get a recognizable cross with a thumb or even a finger; the opening of the bottle is clearly sized for the brush.
