I ofter read that some of the writings in the NT attributed to St. Paul were not written by him, Ephesians, etc. Can anyone direct me to literature that discusses the subject?
 
Sure, I guess a start is the New Jerome Biblical Commentary. This outlines a list of scholars for and against Pauline authorship on each of the books.

We talk about the Proto-Pauline, those directly from Paul, and the Duetero-Pauline, those which may have come out of the Pauline tradition.

You are quite right, Ephesians is one of those which is disputed.
Remember, it is still the Word of God.
