God, the eternal Word, has no gender in his divinity, but he freely took on a the nature of a male humanity. Could God have chosen to do otherwise?

He could have, sure. He’s allowed to do whatever He wants. He’s…well, God 😉

Don’t you think it would have been difficult to make “her” a “King”?

Let me ask you this question, and I think you will have your (theoretical) answer:
Is G-d all-powerful?

Peace.

If God willed it, then yes. God has no limitations.
If he could hypostatically unite as a woman, then could he unite with some other created nature? An angel? A dog? A tree? A rock?

And could another person of the trinity also unite?

Depends on how you look at it. Since God revealed Himself to us as a Father it would seem to me to be fitting that His human nature would also be male.
