Couldn't Jesus have been God just under human appearance?

If the Eucharist, by transubstantiation, is fully Jesus and no longer bread after consecration, how is it that the Church teaches that Jesus Himself was both human and God, and not just God with the appearance of being human, like the Eucharist is Jesus with the appearance of bread? (transubstantiation vs consubstantiation)
